Food is a momen­tary plea­sure; it often takes hours, days or even weeks of prepa­ra­tion and is served and served. After­wards, it is — in the best case — only a mem­o­ry. Negroni

The Negroni, care­ful­ly matured in the bar­rel, is a mat­ter close to Sven Wass­mer’s heart and, with its bit­ter-sweet taste, has been an inte­gral part of his menus for many years. When switch­ing from the savoury to the sweet part of the menu, Wass­mer’s Negroni to a sor­bet marks the tran­si­tion to the desserts.
